5 Easy Fruity Cocktails to Sip Around the Firepit This Summer

Summer evenings around the firepit need two things: good company and a good drink. Here are five refreshing, fruity cocktails simple enough to mix on the patio — no blender-juggling, no obscure ingredients, no bartender certification required. 1. Frozen Rosé Slushie
The crowd-pleaser. Pretty enough to photograph, easy enough to make a pitcher of while the chairs are still being set up.
- 1 bottle dry rosé, frozen in ice cube trays the night before
- 1 cup frozen strawberries
- 2 tbsp sugar (or to taste)
- Juice of 1 lemon
- Fresh mint, for garnish
Blend rosé cubes, strawberries, sugar, and lemon juice until slushy. Pour into glasses, tuck in a sprig of mint, and pretend you're somewhere with a view of the Mediterranean.
2. Bourbon Peach Smash
Smoky bourbon, ripe peach, a little citrus. This one was made for the glow of a fire table.
- 2 oz bourbon
- 2 fresh peach slices
- 4 fresh mint leaves
- ¾ oz fresh lemon juice
- ¾ oz simple syrup
- Soda water, to top
Muddle peach and mint in a glass. Add bourbon, lemon juice, and simple syrup, fill with ice, and top with a splash of soda. Stir gently. Garnish with a peach slice on the rim.
3. Watermelon Basil Margarita
The unexpected combination that converts every skeptic. Watermelon is summer's secret weapon.
- 2 oz silver tequila
- 3 oz fresh watermelon juice (blend the chunks, strain)
- ¾ oz fresh lime juice
- ½ oz triple sec
- 3 fresh basil leaves
- Tajin or flaky salt, for the rim
Rim a glass with Tajin or salt. Shake all liquid ingredients with the basil and ice, double-strain into the glass over fresh ice. Float a basil leaf on top.
4. Sparkling Blackberry Lemonade (Spiked or Not)
The one that works for everyone — designated drivers, kids, anyone taking a night off. Skip the vodka and it's still gorgeous.
- 1½ oz vodka (optional)
- ¾ cup fresh lemonade
- ¼ cup muddled blackberries
- Sparkling water, to top
- Lemon wheel, for garnish
Muddle blackberries in a tall glass. Add lemonade and vodka if using, fill with ice, top with sparkling water. The blackberries swirl into the lemonade like a sunset.
5. Coconut Pineapple Mojito
A vacation in a glass. Best sipped with bare feet on a warm patio.
- 2 oz coconut rum
- 2 oz fresh pineapple juice
- ¾ oz fresh lime juice
- 8 fresh mint leaves
- 1 tsp sugar
- Soda water, to top
Muddle mint and sugar in a glass. Add rum, pineapple juice, and lime juice, fill with crushed ice, top with soda water. Stir from the bottom up to lift the mint, then garnish with a pineapple wedge.
